Apple Pie Chia Seed Pudding
Chia seeds are known for their high fiber and omega-3 fatty acid content. Drinking it in water didn’t do it for me, but this chia seed pudding definitely did :)
Ingredients:
1/2 cup (120ml) almondmilk
2 tbsp (20g) chia seeds
1 tbsp (15g) vanilla greek yogurt
dash of cinnamon
1 tbsp (15ml) SF maple syrup
Apple Pie Topping:
1 apple
dash of cinnamon
2 tbsp (30ml) SF maple syrup
(I also added on an apple cinnamon rice cake but that can be substituted for nuts or granola. I am not going to include it in the calorie count.)
Directions:
Step#1:
Combine all of your ingredients aside from the apple pie topping ingredients into a jar. Stir all of the ingredients together and refrigerate for 3+ hours.
Step#2:
Once that is done, microwave 1 chopped apple with your syrup and cinnamon and serve it on top of your pudding :)
