Birthday cake protein pancakes

These protein pancakes are super fluffy and are a great high protein, low cal breakfast that is perfect for any occasion!
This recipe makes 3 servings!

Ingredients:

1 cup (88g) oat flour

3 tbsp (35g) 0 cal sweetener- it is highly recommended to use more if you use plain greek yogurt to add more sweetness- I use erythritol

2 tsp (8g) baking powder

2 scoops (62g) vanilla protein powder - I use optimum nutrition vanilla ice cream flavor

3 egg whites (90g)

3/4 cup (170g) vanilla greek yogurt - I use oikos triple zero

1/2 cup (120g) milk of choice - I use unsweetened vanilla almondmilk

splash of vanilla extract

2 tbsp (23g) sprinkles

pinch of salt

Directions:

Step #1:

Mix dry ingredients well in a large bowl (flour, sweetener, protein, baking powder, salt).

Step #2:

In another bowl mix the wet ingredients (egg whites, milk, vanilla, yogurt). Then fold it into the dry ingredients, adding in the sprinkles last.

Step #3:

Heat up a pan or a griddle. Cook both sides of the pancake until fluffy and golden brown. The batter should yield to 6 pancakes.

Step #4

Top the pancakes with your favorite toppings and enjoy!

(I like to drizzle on some more greek yogurt or sugar free maple syrup!)
