This breakfast tortilla pizza is an incredible, nutritious breakfast that can be customized to your liking!
Ingredients:
1 Whole Wheat Mission Carb Balance Tortilla
cooking spray
1/2 cup (121g) Egg Whites
1 tbsp Lowfat Shredded Cheese - Mexican Blend
1/4 of an avocado sliced
Small handful of arugula or spinach
hot sauce
Vegetables: (these are customizable, but this is what I typically use)
5 Cherry Tomatoes, halved
5 Baby Bella Mushrooms, diced
Directions:
Step#1:
In a hot pan greased with cooking spray, heat up your tortilla until it becomes crispy, then spray the bottom of the pan again and flip the tortilla, allowing the other side to get crispy. When it is done, it should feel almost like a chip.
Step#2:
Take the crispy tortilla and place it in between two objects (I like to use two salt shakers) forming it into a taco shell shape and letting it harden.
Step#3:
Scramble your eggs in a pan and place them at the bottom of the taco shell
Step#4:
Sautee your veggies of choice into the pan with a pinch of salt and pepper and place on top of eggs in the taco shell when fully cooked.
Step#5
Add on the hot sauce, avocado, arugula/spinach, cilantro, and salsa and enjoy!
