Buffalo cauliflower tacos

These buffalo cauliflower tacos are an extremely delicious, quick, and healthy recipe! Not to mention, its vegan!
This recipe makes 2 tacos! I will show the nutrition facts for 1 taco, but feel free to have both if you want )

Ingredients:

2 tortillas - I use the mission carb balance tortillas

Buffalo Cauliflower:

1 (12oz) bag Cauliflower Florets

2 teaspoons Olive Oil

1/4 cup (64g) Franks Red Hot Buffalo Sauce

Avocado Drizzle:

1/2 Avocado (mashed well)

2 tsp (8g) Lemon Juice

1 tsp (3g) Olive Oil

2 tsp (10g) Water

Salt & Pepper

Toppings:

Handful of arugula or spinach

Cilantro

Directions:

Step#1:

Coat your cauliflower in the olive oil and airfry it at 400F for 10 minutes.

Step#2:

As it cooks prepare the avocado drizzle by mashing the avocado and mixing in the lemon, olive oil, water, and salt & pepper. If you want the mixture to be thinner, don't hesitate to mix in more water!!

Step#3:

Take your cauliflower out of the Air Fryer and in a medium bowl coat the pieces in the buffalo sauce and Air Fry again at 400F for 6 minutes.

Step#4:

Heat up your tortillas

Add on the cauliflower, avocado drizzle, arugula/spinach, and cilantro!
