Burger Salad Bowl

This burger salad is super easy, super healthy, and quick! Its a super customize-able lunch or dinner to make when you have a bunch of veggies laying around.

Ingredients:

Large handful of Mixed Greens

1/4 of a medium sweet potato (sliced into thin coins)

1 bell pepper (sliced)

1/2 cup broccoli

10 baby carrots

Trader Joes "Hi-Protein Veggie Burger" Or burger patty of choice

Dressing:

1 tsp Olive Oil

3 tsp Lemon Juice

Salt & Pepper

Directions:

Step#1:

In a bowl lay out your bed of greens.

Step#2:

Coat your veggies lightly with olive oil, salt and pepper, then airfry or bake at 400F until fully cooked.

Step#3:

Cook your burger/ veggie patty as directed on your box. For mine, I airfryed it at 350F for about 10-15 minutes.

Step#4:

While your veggies and burger are cooking, prepare your lemon dressing by mixing the lemon juice, olive oil, salt, and pepper in a small mixing bowl.

Step#5

Drizzle your dressing over the greens, then lay the cooked veggies and burger patty on top.

Step#6

Drizzle on your favorite sauces and condiments, I like to use a bit of tahini. I also like to add some fresh tomato and avocado, but it is not necessary :)
