cauliflower Fried Rice
This cauliflower rice is super delicious and the perfect low calorie meal or side dish !!
This recipe makes 2 servings!
Ingredients:
16oz bag of Cauliflower Rice
1 1/2 cups Frozen Mixed Veggies- carrots, peas, corn
olive oil spray
1 cup Chopped Mushrooms
Salt & Pepper
Garlic Powder
Onion Powder
1/4 cup Soy Sauce
2 eggs
Everything Bagel Seasoning
Directions:
Step#1:
Heat 1 1/2 cups of frozen mixed veggies as directed on the package.
Step#2:
In a large pan greased with olive oil sauté mushrooms with a generous sprinkle of garlic powder, onion powder, salt, & pepper
Step#3:
Once the mushrooms become softer and shrink in size, add in the bag of cauliflower rice and allow it to cook down until the cauliflower becomes softer.
Step#4:
Once the cauliflower is soft you can add in your prepared frozen vegetables and soy sauce -adding more if necessary.
Step#5
In a separate pan cook eggs as desired and place it on top of the rice with a sprinkle of everything bagel seasoning and hot sauce.

For this serving size I measured out about 1/2 of the rice with one egg on top per serving.
