Chicken lettuce Cups

These Chicken Lettuce Cups are a great low carb, high protein lunch that can be meal prepped for school or work!

Ingredients:

Chicken:

1 pack of ground chicken (you can also use turkey or beef)

1/2 white onion chopped

1/4 cup chopped water chestnuts (they come in a can)

Salt & Pepper

Stir fry Sauce:

5 tbsp coconut aminos or soy sauce

2 tsp sesame oil

1 tsp rice vinegar

1/4 tsp minced garlic

1 tsp 0 cal sweetener

a head of butter lettuce or iceberg lettuce

1/4 cup shredded carrots

hot sauce (optional)

Directions:

Step #1:

Saute your onion with some salt and pepper and a spray of oil on a pan. Then when it starts to become a light caramel color, mix in the ground chicken.

Step#2:

After the ground chicken is cooked through, pour in your stir fry sauce and water chestnuts. Mix until fully incorporated.

Step#3:

When ready to pack into containers, separately pack the meat, the lettuce, hot sauce, and the carrots. This will allow them to stay fresh.

Step #4:

For one serving you will only need 1/2 cup or (88g) of the chicken mixture and 4 leaves of butter lettuce!
