Chinese Chicken Salad Spring Rolls

These chinese chicken salad spring rolls are the perfect high protein and healthy lunch to take to school or work!

 
 

Ingredients:

3 rice paper wraps

1 cup lettuce chopped

1/2 cup (70g) rotisserie chicken

1/4 cup (22g) shredded carrots

1/4 cup (20g) shredded cabbage

dipping sauce:

1 tsp sesame oil

1 tsp rice vinegar

1 tbsp coconut aminos

1 tsp SF maple syrup

1/4 tsp minced garlic

salt & pepper

sprinkle of sesame seeds

Directions:

Step#1:

Dip each rice paper wrap in water for a second or two, then fill it. It should soften up as you go.

Step#2:

Wrap each of them by folding the sides in and rolling it forward, like a burrito. It should make 3 rolls.

Step #3:
Then, mix together the ingredients for your sauce and enjoy!
