Creamy cauliflower Pesto Sauce
This cauliflower pesto sauce is a low cal, high volume alternative to traditional pesto sauces. It is super creamy and can be thrown together quickly!
Ingredients:
1 head of Cauliflower
2 cups (85g) Basil Leaves
3 tbsp (15g) Lemon Juice
3 tbsp (15g) Parmesan Cheese (or nutritional yeast for vegan option)
1 Garlic Clove
1 tbsp (8g) Olive oil
1/2 cup (120g) Water
Cayenne Pepper
Onion Powder
Salt & Pepper
Directions:
Step#1:
Chop up, then boil your head of cauliflower until it becomes soft.
Step#2:
Throw your cauliflower in a blender with the remaining ingredients!
Step#3:
Serve with your favorite noodles & enjoy!
Extras can be stored in the fridge for up to 5 days.
