Eggplant Pizzas
These eggplant pizzas are an incredible crowd pleaser and an amazing keto friendly snack!
Ingredients:
1 eggplant
Salt
Pizza sauce (about 1-2 teaspoons per slice)
garlic powder
Shredded Mozzarella cheese (I used about 2 tablespoons per slice. adjust the amount per slice to your liking)
Optional pizza toppings:
mushrooms, meat, bell peppers, olives
Directions:
Step#1:
Slice the eggplant into 1/4 inch slices (mine yielded 20 slices) and lay them out on a piece of parchment paper
Step#2:
Sprinkle salt on the top side of the eggplant and let them sit for 10 minutes. Then, pat each slice dry and flip them. Repeat on the other side adding a sprinkle of salt on each slice and patting them down after another 10 minutes.
Step#3:
Preheat your oven to 350°F. Then, place your eggplant slices on a tray lined with parchment paper (I ended up having to use 2 trays)
Step#4:
Sprinkle a small layer of cheese on each piece and bake for 5-10 minutes until your cheese melts
Step#5:
Remove the eggplant slices from the oven and flip them. Now, spread your preferred amount of pizza sauce, garlic powder, and cheese on each slice adding on any other toppings (mushrooms, meat, bell peppers, olives)
Step#6:
Bake again at 350°F until the cheese is melted

Serve and enjoy!
