Greek Salad

This greek salad is a delicious vegetarian salad that is perfect when prepped for school or work the night before!

 
 

Ingredients:

1 small head romaine lettuce

1 roma tomato

1/4 cup (30g) chopped cucumbers

1/4 cup (42g) chickpeas

1oz (28g) feta cheese

Dressing

1 tsp (5g) dijon mustard

juice of a medium lemon

2 tsp (4g) olive oil

salt and pepper
