Funfetti Birthday Cake
This funfetti birthday cake is so tasty, you won't even believe that its healthy!! Also, it is packed with protein :)
This recipe makes 4 servings!
Ingredients:
Batter:
1/3 cup (35g) Oat Flour
2 scoops (62g) Vanilla Whey Protein Powder - I use Optimum Nutrition
1/2 tsp (3g) Baking Powder
4 tbsp (54g) 0 calorie sweetener - I use Erythritol
2 tbsp (12g) Coconut Oil
4 tbsp (69g) Greek Yogurt
1 tsp (4g) Vanilla Extract
1 tbsp (12g) Milk - I use silk unsweetened coconut milk
3 tsp Sprinkles
Frosting:
1 tbsp (15g) lowfat cream cheese
3 tbsp (39g) greek yogurt
1 tsp sweetener of choice - I used Erythritol
dash of vanilla extract
1 tsp of sprinkles (for on top)
Directions:
Step #1:
Preheat your oven to 300°F
Step #2:
Mix the batter ingredients well and transfer the batter into a small baking dish - I divided mine into two mini cake pans
Step #3:
Bake the cake until cooked through - about 15-20 mins.
Step #5
Mix the frosting ingredients together in a small bowl, frost the cake, and add 1 tsp of sprinkles on top.
