Healthy Imposters: Little bite muffins

What if I told you that you can make a healthier version of the nostalgic, and delicious little bite muffins?! These are a must try!

Ingredients:

1 1/2 cup (135g) Oat Flour

1/4 cup (47g) 0 Cal Sweetener

2 tsp (8g) Baking Powder

1/2 cup (115g) Greek Yogurt

1/4 cup (62g) Applesauce

1 tsp (4g) Vanilla Extract

1/2 cup (120g) Almond Milk

2 eggs

pinch of salt

1/4 cup (37.5g) Sugar Free Chocolate Chips

1/2 cup (95g) Chopped Blueberries


Directions:

Step #1:

After preheating your oven to 350°F, combine all of the ingredients in a large mixing bowl aside from the blueberries and chocolate chips.

Step #2:

Split mixture in half. To one half add the chocolate chips and add blueberries into the other.

Step #3:

Fill a 24 mini muffin tray for each batch and bake both batches at 350F for 15-20 minutes.

Step #5:

Let cool completely & enjoy. These can be stored in a container in the fridge for up to 5 days.
