High protein birthday cake muffins

These high protein muffin bites are a delicious healthy alternative to store bought treats!

 
 

Ingredients:

Dry ingredients:

3/4 cup (80g Kodiak Cakes Protein Pancake Mix

1 1/2 scoops (46g) Vanilla protein powder (I used optimum nutrition in the vanilla ice cream flavor)

1.5 tsp (7.5g) baking powder

3 tbsp (35g 0 cal sweetner of choice

pinch of salt

Wet ingredients:

1/4 cup (56g) Vanilla greek yogurt

1/4 cup (62g) applesauce

1/2 cup (120g) almondmilk

2 tbsp (23g) sprinkles

Directions:

Step #1:

In two separate bowls, combine the wet ingredients, then combine the dry ingredients. Mix the wet into the dry ingredients.

Step #2

Fold in the sprinkles.

Step #3

Divide the mixture into 32 mini muffin tins (almost 1 tray and a half - you can find the mini muffin tin I used on my amazon finds!!) and bake it at 350F for 10-15 minutes
