High protein microwave Cinnamon coffee cake

This coffee cake is super high in protein and the perfect healthy dessert

Ingredients:

1 tsp melted coconut oil

1 egg

splash of vanilla extract

3 tbsp oat milk -or any other milk

1 tbsp greek yogurt

1 scoop vanilla whey protein

2 tbsp 0 cal sugar substitute (I used erythritol)

2 tbsp oat flour

1/4 tsp baking powder

Dash of cinnamon


Cinnamon sugar:

1 tsp coconut sugar

1/2 tsp cinnamon

Directions:

Step#1:

In a microwave safe bowl, whisk the wet ingredients - yogurt, milk, egg, coconut oil, vanilla extract.

Step#2:

Once the wet ingredients are fully mixed whisk in the dry ingredients - protein powder, oat flour, baking powder, dash of cinnamon, 0 cal sugar.

Step#3:

Then in a separate bowl mix the teaspoon of coconut sugar and 1/2 teaspoon of cinnamon. Sprinkle the mixture over the top of the cake.

Step#4:

Microwave the cake for 1:30. Enjoy!!


These calories are based on the whole cake, which is relatively large in size, meaning that you can half the recipe or cake if desired.
