Protein Blueberry Muffins
These muffins are a delicious high protein & low calorie alternative to regular blueberry muffins!
Ingredients:
2/3 cup oat flour
2 scoops (62g) vanilla whey protein ( I use optimum nutrition)
1 teaspoon baking powder
3 tsp sugar free sweetener (I use erythritol)
1 egg
1/2 cup greek yogurt
4 1/2 tablespoons milk (I use unsweetened almond milk)
2 teaspoons vanilla extract
2/3 cup blueberries
Directions:
Step #1:
After preheating your oven to 350°, mix the dry ingredients (out flour, whey protein, baking powder, and sweetener) in a medium mixing bowl.
Step #2:
In another mixing bowl mix the wet ingredients (egg, yogurt, milk of choice, and vanilla)
Step #3:
Mix the wet ingredients into the dry ingredients, then fold in the blueberries.
Step #5
Split into 8 muffins in your prepared muffin tray.
Step #6
Bake for about 15-20 minutes of or until your muffins have a nice golden color.
Enjoy and reheat by lightly toasting or microwaving (10 secs) if serving later!
