Pumpkin Spice Waffles
These pumpkin spice waffles are super flavorful and crispy and can be used as a batter for pancakes as well!
Ingredients:
1/3 cup (30g) oats
1/4 cup (56g) pumpkin puree
2 egg whites or 1/3 cup egg whites (74g)
1/2 teaspoon (2g) vanilla extract
1/4 teaspoon (1g) pumpkin spice
1/2 teaspoon (1g) baking powder
1/4 cup (60g) milk of choice (I use unsweetened almond milk)
1 tbsp (15ml) SF Maple syrup
Optional maple greek yogurt topping:
Scoop of vanilla or regular greek yogurt
1/4 teaspoon vanilla extract
sprinkle of pumpkin spice
1 teaspoon SF maple syrup
*SF= sugar free
Directions:
Step #1:
Place all of your ingredients into a blender.
Step #2:
Blend until fully combined adding more milk if necessary.
Step #3:
Pour batter into greased waffle maker and cook until warm and crispy. If making pancakes pour into greased pan and cook.
Step #5
top with your favorite toppings (maple greek yogurt topping, maple syrup, chia seeds)
