Roasted veggie Salad & Spicy Tahini Dressing

This Roasted Veggie Salad is a warm, comforting, and refreshing salad recipe for anytime!

Ingredients:

 Large handful of Mixed Greens

1 Zucchini (sliced)

Handful of Baby Carrots

Olive Oil

Salt & Pepper

1 1/2 Tbsp Tahini

Sriracha Sauce

2 Tbsp Hot Water

1 Tbsp Lemon Juice

(other veggies can be added as well)

Directions:

Step#1:

Preheat oven to 350°

Step#2:

Place your sliced zucchini and baby carrots in a medium mixing bowl and coat them with olive oil. Season with salt and pepper.

Step#3:

Place the carrots and zucchini on to a baking tray and bake at 350° for 15-20 minutes

Step#4:

While your veggies are baking place your large handful of mixed greens into a bowl and drizzle with the lemon juice

Step#5

Place roasted veggies on top

Step#6

To make the dressing grab a small bowl and mix the tahini and sriracha sauce (the amount that you desire)

Step#7

Add the hot water to the tahini and hot sauce mixture to loosen the consistency
