Shrimp taco salad

This healthy shrimp taco salad is an amazing dinner for 4 people!

 
 

Ingredients:

1 head of iceberg lettuce

1 cup cherry tomatoes

1/2 small red onion

1 avocado chopped

16 oz shrimp (peeled and devained) - I used a frozen pack and defrosted it

1/4 cup lemon juice

Spices: paprika, salt, pepper, cayenne pepper, garlic powder

Dressing:

2 tbsp (26g) olive oil

3 tbsp (43g) lemon juice

salt and pepper

Directions:

Step #1:

In a bowl prepare the base of your salad by placing all of your chopped veggies in.

Step #2:

Then to prep your shrimp cook it on a pan with a generous spray of oil. Add in your spices, then once it is fully cooked let it simmer in your 1/4 cup of lemon juice.

Step #3:

When your shrimp is done, place it on your salad and drizzle on your homemade dressing listed in the ingredients section!
