strawberry Pancakes
These heart shaped pancakes are a super fun and healthy Valentines Day and year round breakfast!
Ingredients:
Batter:
1 Egg
1/3 cup (40g) Oats or Oat flour
5 Strawberries (106g)
1/4 tsp (1.2g) Baking Powder
1/4 tsp (1g) Vanilla Extract
4 tbsp (70g) Greek Yogurt
Optional- drop of red food coloring - just for fun : )
For on top:
1 tbsp Pure Maple Syrup
2 strawberries
You can also add in dark chocolate chips as well :) - not included in my recipe
Directions:
Step #1:
Microwave the 5 strawberries for 1:30 and allow them too cool completely.
Step #2:
Combine all of the ingredients (except for toppings) into your blender or food processor and blend until well combined
Step #3:
Heat up a non stick pan (grease pan with a spray of oil if necessary) and pour in the amount you want each pancake to have. I used a squeeze bottle to make my pancakes heart shaped.
Step #4:
Flip the pancakes when bubbles begin to form and some start to pop and cook on the other side until the pancakes are fully cooked.
Step #5:
Cut the strawberries into heart shaped slices and serve with 1 tbsp of pure maple syrup
