Sweet Potato Nachos
These sweet potato nachos are super delicious, quick, and customizable!
Ingredients:
1 sweet potato
olive oil
salt & pepper
Trader joe's onion salt (can be substituted for onion powder and garlic powder)
3 tablespoons drained black beans
1/4 avocado
small handful of sliced red onions
2 tablespoons store bought low calorie salsa
2 tbsp shredded mexican cheese blend
hot sauce- optional
Directions:
Step#1:
Thinly slice sweet potato and place into a medium mixing bowl.
Step#2:
Lightly coat the sweet potato slices in some olive oil and season with salt, pepper, and onion salt.
Step#3:
Bake or airfry sweet potato at 350F for 15-20 minutes or until browned. Then, sprinkle the cheese over the hot sweet potato slices and let it melt.
Step#4:
mash avocado and mix with red onions & a pinch of salt and pepper (optional: lime juice)
Step#5
top the sweet potato slices with the guacamole, bottled salsa, hot sauce, beans, and more cheese if desired.
