Taco Salad

This taco salad is the perfect salad for meal prepping a healthy lunch!

Ingredients:

1 pack of ground chicken (you can also use turkey or beef)

1/2 pack of taco seasoning

1 head romaine lettuce chopped

1/4 cup (65g) black beans

2 tbsp (8g) red onion

1/4 avocado mixed w 2 tsp lemon juice

Dressing:

1 tsp (2g) olive oil

2 tbsp (30g) lemon juice

pinch of cilantro

salt and pepper

Directions:

Step #1:

Prepare your meat with a spray of oil on a pan. Then when it is fully cooked, mix in your taco seasoning.

Step#2:

Fill your bowl or container with lettuce, tomato, black beans, onions, 1/2 cup (84g) of your taco meat, and your avocado. The meat should last for 4 servings!

Step#3:

Then prepare your dressing, I recommend keeping it in a separate container and mixing it in when you eat the salad so its not soggy!
