Waffle Maker Egg Bites
These waffle maker egg bites are a super quick & nutritious 5 minute meal prep breakfast!
This recipe makes 3 servings!
Ingredients:
Egg bites:
4 eggs (whisked)
4 baby bella mushrooms (diced)
3 mini bell peppers (diced)
1/4 of a tomato (diced)
cooking spray
Toppings:
1 Avocado (mashed)
Salt & Pepper
1/2 cup Arugula or Spinach
Hot Sauce
Directions:
Step #1:
After spraying your waffle maker with cooking spray, pour in a layer of the eggs, then add in a pinch of the diced veggies, close the waffle maker and allow the eggs to cook fully.
Step #2:
Using a fork or a spatula remove the egg bite out of the waffle maker and repeat the process until you finish all of the eggs, it should make 6 waffles.
Step #3:
Serve two egg bites on each plate and top each with a spoonful of mashed avocado, a sprinkle of arugula or spinach, salt, pepper, and hot sauce.
Note: If you only want to have one serving, you can refrigerate the egg bites and serve them within 2-3 days of cooking!!
